Fresh-Frozen Mozuku

Raw mozuku, never salt-preserved. Washed only in sterilized seawater — never fresh water — and flash-frozen the day it leaves the sea, so the crisp bite, briny aroma and umami arrive intact. Just thaw and eat — with ponzu, dropped into miso soup, or over hot rice.

The Miyakojima Fisheries Cooperative has worked these coral waters since 1970. Our members cultivate mozuku in the shallows around Miyakojima — home to the famous Yabiji coral reef — and harvest each crop on its very best day.
